Tip of the Week: Regrowing Vegetables

The past couple of years I have changed my diet to include more fresh fruits and vegetables, and I have encouraged my friends and family to do the same. Just this weekend, I hosted a party and served 7-layer dip made with green onions that were REgrown in water! I had recently seen a blog about REgrowing green onions and thought, “Genius!”

I have to admit, it seemed too good to be true. I don’t have much of a green thumb, so I thought this would be a great way to start out. Following the blog’s advice, I snipped off the top of the green onions and left about an inch of the bulb which I then put root-down into a glass, with a little water. I put the glass in a sunny window, changed the water daily, and within five days my onions were growing tall! I have been using them in soups, salads, dips, and as a finishing touch on dinners.

I was so excited about this concept that looked into what other great things I could regrow at home. I just started to regrow celery this week, so my fingers are crossed! Other foods I found were potatoes, garlic, and ginger.

The great thing about regrowing is that you can use things you would normally throw away and you don’t need a big garden to do it! Plus, you can save a few bucks on groceries and maybe even get your kids involved!
